Ingredients:

1-1/2 pounds of ground beef (95% lean)
1 package (11.3 ounces) refrigerated dinner roll dough or (16.3 ounces) reduced fat buttermilk biscuit dough
1 package (1.25 ounces) reduced sodium taco seasoning mix
3/4 cup sloppy joe sauce
1/3 cup shredded reduced fat Mexican four-cheese blend

Directions:

1. TURN the oven heat setting to 375 degrees
2. SEPARATE the roll dough and PRESS each piece into a
3-1/2-inch circle. TURN a regular-size muffin pan upside down. SPRAY bottom of muffin pan lightly with nonstick cooking spray. PLACE each dough circle on the bottom of a muffin cup. (Not all of the muffin cups will be covered.) PRESS the dough around the cup and down to the flat surface of the pan to form it into an upside down cup.
3. Adult help needed: PLACE the muffin pan in the oven. BAKE 11 to 14 minutes or until the dough looks lightly browned. CAREFUL! Muffin pan will be very hot! Using pot holders, carefully REMOVE the pan. Cool slightly then PLACE the baked cups on a serving platter. If necessary, PRESS down on the inside bottom to keep the cup shape.
4. Adult help needed: While the dough cups are baking, COMBINE the ground beef and taco seasoning mix in a large nonstick skillet. Careful! Skillet will be very hot! COOK and STIR the beef mixture over medium heat 8 to 10 minutes or until beef is no longer pink, breaking it up into 3/4-inch crumbles with a wooden spoon. It is not necessary to remove the liquid from the pan.
5. Adult help needed: ADD the sloppy joe sauce to the beef. STIR with a wooden spoon to mix well. COOK 1 to 2 minutes or until the beef mixture is hot. ADD 1/3 cup cheese and STIR to mix well. REMOVE the skillet from the hot burner and place it on a cool burner.
6. Adult help needed: While the beef is cooking, use a sharp knife and cutting board to carefully SLICE the lettuce leaves into thin strips. CHOP the tomato into small pieces.
7. Careful! Beef mixture will be very hot! SPOON the beef mixture evenly into the baked cups. The cups will be full. TOP each cup evenly with as much lettuce, tomato and cheese as you want. TOP with sour cream and olives, if you like.
